6 Tbsp butter
8 oz white American cheese
6 beaten eggs
6 Tbsp flour
4 c small curd cottage cheese
3 packages of frozen spinach
1. Preheat oven to 350. Cut butter and cheese into 1/4 inch cubes. Set aside.
2. In medium bowl beat eggs lightly. Add flour, cottage cheese, butter, and American cheese. You can add a pinch of salt & pepper, but I normally don’t. Defrost the frozen spinach, and do your best to remove and squeeze out most of the water. Add to mixture and mix well.
3. Place in a greased ovenproof dish (I use a large ovenproof round Pyrex bowl). Bake at 350 for 1 hr. Serve hot.
